Ingredients

  • 1 cup Butter (230g) Melted
  • 1 ¾ cups Light Brown Sugar (350g)
  • 2 Large Eggs
  • 1 Egg Yolk
  • 1 ½ teaspoons Vanilla Extract
  • 2 ¼ cups All Purpose Flour (281g)
  • 2 teaspoons Cornstarch
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup White Chocolate Chips (175g)
  • ½ cup Nutella (150g) Melted

Instructions

  • Preheat the oven to 350°F (180°C). Spray a 9x9 square dish with non-stick spray and line it with parchment paper so that there is overhang on either side for easy removal later.
  • Add melted butter and light brown sugar to a mixing bowl and whisk them together.
  • Add eggs, one at a time, stirring well after each egg is added, and then add the egg yolk and vanilla extract and stir it well.
  • In a separate bowl, sift all purpose flour and add cornstarch, baking powder and salt and mix together.
  • Slowly add the dry ingredients in with the wet and stir in until just combined. Don't overmix.
  • Add white chocolate chips and fold them in.
  • Transfer the blondie batter to your prepared 9x9 square dish and smooth down.
  • Add Nutella to a microwave safe bowl and microwave in 15-second intervals, bringing it out to stir every 15-seconds until melted. It will still be quite thick. Use a teaspoon to drizzle it over the top of the blondies.
  • Bake for 30 minutes until the top looks dry and set.
  • Leave them to cool completely in the pan and then use the parchment paper overhang to lift them out of the pan. Cut them into squares and serve.

Notes

  1. Light brown sugar - you could also use dark brown sugar but just keep in mind that your blondies will be darker in color.
  2. All purpose flour - make sure to measure this correctly, either using a food scale or the spoon and level method. Spoon the flour into your measuring cup and then level off the top with the back of a knife.
  3. Cornstarch - assists in keeping these blondies deliciously soft and tender.
  4. 9x13 baking dish. If you prefer to make these Nutella blondies in a 9x13 baking dish then you can, they will just be thinner. Baking time will reduce to around 25 minutes.
  5. Storing: Store your blondies in an airtight container at room temperature for 3 days or in the fridge for up to a week. They store really well in the fridge so it's great for when you'd like to have them around a bit longer.
  6. Freezing: They are freezer friendly for up to 3 months. Let them cool completely before freezing. Let them thaw overnight in the fridge.
