Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
Spread the rolled oats and chopped almonds evenly across the baking tray. Bake for 12 minutes (stirring once halfway through) until lightly toasted. Transfer to a mixing bowl.
Add butter, light brown sugar and honey to a saucepan and melt them together, stirring all the while. Pour this over the rolled oats and almonds in the mixing bowl.
Add the vanilla extract, salt, dried cranberries and chocolate chips and mix everything together. The chocolate chips will melt a little and this is perfect.
Line an 8x8 square dish with parchment paper so that there is overhang on either side. Transfer the granola bar mix to the 8x8 square dish and spread it out evenly.
Take a piece of parchment paper and place it on top of the granola bar mix and then take a measuring cup and press down on it from the top so that you get the top really smooth. This also packs it in tightly so that it sets well. Place it into the fridge to set completely (about 2 hours).
When the granola bars are set, remove them from the dish using the parchment paper overhang. Cut into 10 equal bars and they're ready to eat!
